This is so yummy, once you start eating this you may not be able to stop. So, I like to make this when I know there are going to be lots of other people around to help with the eating. If you want to add a little heat to this, add a jalepeno pepper to this (seeded and finely diced). Some say leaving an avocado pit in the guacamole will help keep it looking green longer.
3 avocados, quartered and peeled
1 small onion, finely diced
1 medium tomato, finely diced
1 small clove of garlic, very finely diced
2 or 3 springs of cilantro, chopped
2 tablespoons freshly squeezed lime or lemon juice
Salt to taste
Choose avocados that are soft to the touch, squeezable but
not so soft you leave a fingerprint.
Quarter avocados lengthwise and pull off peel. Add all ingredients to mixing bowl and use
potato masher to mix and mash the ingredients.
Serve immediately. The guacamole
will darken (turn brown on top) if not
used right away, to prevent this, top with a thin layer of olive oil or just
eat it all it one sitting, it’s really good.
