Happy Weekend!
Today’s post is going to be mostly pictures. So remember how the other night was Supper Club? It was Mexican theme and everything was really good, except I didn’t like what I made very much. I made zucchini enchiladas with a pumpkin seed and cilantro pesto and homemade salsa and I honestly thought the best part was the salsa. I think the problem is that the recipe said to grill the veggies and then fry the enchiladas in oil and I roasted the veggies in the oven and then baked them. They weren’t bad, but weren’t great either. I think they might have been better if I followed the recipe a little closer. If you are interested in the recipe, you can find it here on Epicurious.

Alex made mexican pizzas and KG made a really good bean dip, that was kind of like a 7 layer dip. Those went unpictured because I was starving and had to start eating haha.

The theme of this post is stuff that is so easy, anyone could do it. Even though homemade salsa seems time consuming, this took less than five minutes to make. I just combined tomatoes (3), half a poblano pepper with most of the seeds removed, 1/4 of an onion, salt and 2 cloves of garlic and blended away in the food processor.
It is delicious and the easiest thing to make. Tasted better than any store bought salsa because it was so fresh.
This weekend, a few friends are in town. Sarah and Ayesha went to college with my roommate and are staying with us for the weekend. Last night we went to a sushi byob and then out! Here are some pics:

I decided to try and curl my hair last night. I have wavy/curly hair naturally but sometimes it looks frizzy and dumb that way. So, I dried it and then used hot rollers. They are so easy to use, much easier than a curling iron (for me, I am really challenged when it comes to using a curling iron).

If you want to try curling your hair and have problems with curling irons like I do, you should give them a try! The ones I have are kind of like these except older and not as cool. I usually use a mixture of all the sizes and roll them different ways (some under, some over) to give a little variety.
OK now I have to get ready for a BBQ and streetfest, another fun night ahead of me!
