Enchilada Lasagna

Hello friends,

Hope everyone had a great weekend!  Mine went by way too quickly but it was fun.  Right now I’m making a pizza and watching the Emmy’s!  If the pizza turns out well, I will have the recipe for you soon.

Today I have another good recipe though…a mexican recipe inspired by enchiladas.  I was craving Mexican all last week and finally caved this weekend and decided to make something.  I love pretty much all mexican food…burritos, enchiladas, taco salad, taco, cheesy gordita crunches…the list goes on.

I already had black beans and ground turkey so I decided to go with an enchilada like dish.  But, I also had corn tortillas and sometimes those are kind of hard to roll up without having them break or crack.  I thought instead I would make an enchilada lasagna, so it would have the same ingredients and taste but it wouldn’t require as much work.

Enchilada Lasagna

12 corn tortillas

1 can enchilada sauce

1/2 cup queso fresco

1 can black beans

1 package lean ground turkey

2 T taco seasoning

1 can green chilies

1 hot pepper

Directions:  First brown the ground turkey in a medium size pan over medium heat.  When the turkey is cooked, drain any fat off and add the taco seasoning.  Add black beans, green chilies and chopped hot pepper to pan and cook until heated through.

While the turkey is cooking, you can start on the ‘lasagna’ portion.  Add a little bit of enchilada sauce to the bottom of an 8×8 pan and then add 4 corn tortillas, overlapping them so that they totally cover the bottom of the pan.  Add some of the turkey/bean mixture and then cover in shredded cheese. Repeat this process 2-3 times depending on how much room you have.  You want the top to end with tortillas–so I did tortillas, filling/cheese, tortillas, filling/cheese, then tortillas.  Cover the top layer of tortillas with sauce and shredded cheese–make sure to cover the top totally in sauce so the tortillas don’t dry out.

Bake at 350 for 20-25 minutes.

These were really good and just so easy!  They have quite a bit of spice though, so if you don’t like spice you can omit the pepper or just make sure to remove all of the seeds.

In other news, I finally got my birchbox!

I got leopard nails (obviously I like those!), mascara, perfume, a bracelet and lash cards (?).  I know I will use everything–minus maybe the lash cards because I’m not really sure I need them but who knows.  It is totally worth 10 dollars and I was so excited when I came home to see the box.  I think it will be fun to try out new products each month.

Speaking of nails, Mer and I tie-died ours today, check it out:

Pretty cool, huh?  To do, you just put drops of nail polish in a cup of water, then swirl the drops and dip your finger in.  It takes awhile though and you have to then get all the nail polish off your finger–as you can see I lost patience and didn’t do a great job getting all of the polish off my fingers. Probably won’t be something I do all the time but it was fun to try!
